Easy low carb, keto friendly German marzipan cookies with only a few ingredients, sugar free, gluten free, dairy free and also diabetic friendly!

These easy cookies made with grounded, blanched almonds (almond flour), could easily be an alternative for the Greek "kourabiedes" cookies.


Their texture is tender and chewy on the inside while they form a crispy crust on the outside.


The flavor strongly reminiscent of marzipan (almond paste). Marzipan is very popular in Germany and you can find it everywhere, especially during festive seasons like Christmas.

Easy Keto Marzipan Cookies


Pieces: 17

• Ingredients:


250 g / Almond flour

(blanched - grated almonds)


60 g / Natural sweetener 1:1 (I use erythritol-stevia blend 1:1)


1 Tbsp / Zest of a bio orange


1 tsp / Gluten-free baking powder


1 tsp / Homemade Vanilla Extract


2 / Egg whites


1-2 Tbsp / Water (if needed)


For the coating before and after baking:


60 g / Powdered natural sweetener 1:1 (I use powdered erythritol-stevia blend)



Instructions:


1 Preheat the oven on 160°C (fan assisted).


2 Prepare a baking tray or baking sheet lining a parchment paper.


3 In a medium-sized bowl, mix the almond flour, sweetener, baking powder and orange zest.


4 Add the egg whites and vanilla extract.


5 Mix at first with a spoon and then by hand to have a sufficiently firm dough that can be formed without crumbling. If necessary, add 1-2 Tbsp of water to get the desired consistency.


6 Shape the cookies into the desired shape and cover with the powdered sweetener.


7 Optionally and just for a nice appearance, make a hole in the center of each cookie (I use the back of a wooden spoon)


8 Place on the prepared oven tray without leaving any distance (these cookies do not rise at all during baking).


9 Bake for about 15 minutes or until lightly golden at the edges.



10 After baking and after they cooled a bit, dip into the powdered sweetener once again.

Storage:

Marzipan cookies can be stored in room temperature for several days without needing to be closed in a container, but they can dry out on the outside. I personally like them better that way. If you want to keep cookies soft, store in a closed container.


 Macros for 1 cookie:
  1.  Protein: 4 g

  2.  Carbohydrates (net): 0.70 g

  3.  Fat: 8.4 g

  4.  Energy: 97 Kcal
