This is the easiest keto cake ever. I tried to make this recipe with only few and cheap ingredients that all can find in a supermarket. The preparation takes only 5 minutes from the moment you weigh the ingredients and.. it may be the simplest keto cake recipe but you will not believe how delicious it turns out! Wanting to keep this recipe as simple as possible, I didn't add icing on it, I only sprinkled some powdered sweetener, and this optional. This dessert is ideal for those who avoid nuts but also for children and has very good macros as well. Give it a try and I'm sure it will be your favorite!

Easy Keto Coconut Cake


Servings 14

• Ingredients: 5 / Large eggs (or 6 medium-sized) 65 ml / Heavy cream (bio) 65 g / Melted butter 200 g / Shredded coconut (sugar-free) 120 g / Natural sweetener 1:1 (I use erythritol-stevia blend 1:1) 12 g / Gluten-free baking powder 1 Tbsp / Lemon zest

Instructions: 1 Preheat the oven on 175°C (fan assisted). 2 Prepare a medium cake tin lining a parchment paper (I use a silicone tin for more convenience). 3 Weigh and mix the dry ingredients. 4 In a bowl, beat the eggs, heavy cream and melted butter. 5 Combine the 2 mixtures beating for 1 minute with a hand mixer. 6 Pour the mixture into the backing form and bake for about 35-40 minutes.

7 After baking, let the cake cool and then sprinkle (optional) some powdered sweetener.
