Keto Waffle Cookies

Low carb, keto friendly soft waffle cookies, sugar free, wheat flour free, gluten free and also diabetic friendly!

These cookies are made without even turning on the oven.


Waffle cookies are baked in the waffle maker.

Of course they can also be baked in the oven if you want to.


They only have a different texture since they are not pressed by the waffle maker.


Made by a waffle iron these cookies become a bit compact, while in the oven fluffier.


It is an easy recipe if you want a sweet treat.

You can also make half the amount and have tasty cookies in a just a few minutes.

Keto Waffle Cookies


Pieces 27

• Ingredients:


200 g / Grated almonds (or hazelnuts)


10 g / Coconut flour


75 g / Erythritol stevia blend 1:1


2 / Medium-sized eggs


45 g / Soft butter


40 g / Cream cheese


1/4 tsp / Salt


1 tsp / Homemade vanilla extract



Icing:


100 g / Dark chocolate (> 85% cocoa content)


1 tsp / Coconut oil


1 - 2 Tbsp / Roasted Hazelnuts (optionally)



• Instructions:


1 Mix all the ingredients in a bowl.


2 Knead by hand until all the ingredients are good incorporated and you have a smooth slightly sticky mixture.


3 Wet your hands with some water and shape small, walnut sized balls.


4 Preheat the waffle maker or the oven at 160°C (fan assisted).


5 Grease the waffle maker with coconut oil, or prepare a baking tray with perchment paper.


6 Press the dough balls to flatten a bit, and place in the preheated waffle maker.

7 Bake for about 5 minutes.


8 When they're slightly golden brown they are ready.


9 Put the cookies out of the device and continue with the rest of the dough.


If you want to use the oven, just put all the cookies in a baking tray and bake for about 10-15 minutes.


After the cookies are cooled you can prepare the icing.

10 Melt the chocolate and coconut oil in a double boil (you can also add some powdered sweetener).


11 Dip one side of the cookies in the chocolate icing, or spread the icing with a silicone brush.


12 Sprinkle some roasted hazelnuts (that's optional)
