Two versions of low carb, keto friendly panna cotta, sugar free, gluten free,

even dairy free, and also diabetic friendly!

This is one of the most delicious and easy, creamy low carb desserts!


It has a rich and velvety taste and comes in two versions, with vanilla aroma or with forest fruits.


It can be made in only a few minutes even if there is no ready made keto jam.

Two versions of Keto Panna Cotta


Servings 5

• Ingredients:


250 ml / Almond milk


250 ml / Heavy cream*


1 tsp / Homemade vanilla extract or


30-50 g / Erythritol-stevia blend 1:1 or any other natural sweetener


1/4 tsp / Guar gum


2 tsp / Gelatin (powdered) (9 g)


40 ml / Water or almond milk

• Instructions:


1 In a medium saucepan, heat the heavy cream and almond milk.


Notes:

For the forest fruit version first put the keto jam in a pot to heat on medium and then add the almond milk and heavy cream.


*If you avoid dairy you can use coconut cream instead.


2 Mix the guar gum with the sweetener and add to the mixture.


3 Stir constantly.


4 Soak (bloom) the gelatin in the water or the almond milk and after 5 minutes add to the mixture.


5 Continue stirring.


6 When the mixture comes to a boil, remove from the heat and divide into

5 bowls.


7 Place the panna cottas in the fridge to chill and set, for at least 3 hours.


Tip

If you want to serve this panna cotta without the bowl, you must first place the bowl with the panna cotta in another bowl with hot water for a very short time.


8 Garnish with some cinnamon (for the vanilla panna cotta version) or with keto jam which you at first dilute with some water.
