Low carb, keto friendly vegan rusks (German Knäkebrot), wheat flour free, gluten free, sugar free, dairy free and also diabetic friendly!

This kind of dry bread (Greek paximadia) is very popular in Germany (Knäckebrot).


Rusks are usually savory but I thought a sweet version would be interesting as well.


These low carb rusks are made with various seeds and do not contain any dairy or eggs.


The thinner the mixture spread on the baking tray, the crispier it becomes.


They taste a bit like the Greek "pasteli" (sesame - honey bars) but chocolate get these rusks in another level.


They are very tasty in savory but also in sweet version, while in the second option can be an alternative to breakfast cereals, adding in almond milk.


The best part is that they are made fast and easy, with simple ingredients and have only 0.8 g carbs each.

Pieces: 30

• Ingredients:


20 g / Hazelnut flour or almond flour


25 g / Coarsely chopped hazelnuts or almonds


50 g / Sesame seeds


60 g / Flaxseeds


50 g / Pumpkin seeds


60 g / Sunflower seeds


15 g / Psyllium husk


1/2 tsp / Salt*


240 ml / Water



• Sweet version:


100 g / Stevia with erythritol 1: 1


1 tsp / Cinnamon


• Topping for sweet version:


40 g / Dark chocolate (> 85% cocoa content)


10 g / Coconut oil


*Note:

For the sweet version add only 1/4 tsp of salt.

Instructions:


1 Mix all the ingredients, depending on the version of your choice, except of those for the topping.


2 Add the water and stir to combine.


3 Set aside for 15 minutes to set.


4 Preheat the oven at 150°C (fan assisted).


5 Spread the mixture between two parchment papers, with a rolling pin, rolling as thin as possible, without gaps in between.

6 Place, with the parchment paper, in a large baking tray or baking sheet and bake for about 50-60 minutes.


7 Cut into small pieces after 10 min of baking time, using a pizza slicer, and then continue baking, or crack by hand after baking.

8 For the sweet version, melt the chocolate and coconut oil in a double boiler and then pour the melted chocolate over the rusks.


9 Scrape again with the pizza slicer in case the rusks stuck together and carefully remove from the parchment paper.
