Low carb, keto friendly Yorkshire puddings, wheat flour free, gluten free, sugar free, with a dairy free version, and also diabetic friendly!

These popular English Yorkshire puddings usually served to accompany a meal with meat.


In their conventional form, before baking, it's a relatively watery batter-like mixture that is usually baked in muffin tins with plenty of fat.

During baking this batter forms to small crispy breads.


My keto version is a bit different.

The batter is not so runny. It's more

like pancakes mixture.


Mainly it's bread, with a neutral taste, but can also be transformed into donuts if you sprinkle with some sweetener and cinnamon.

Servings 12

• Ingredients:


4 / Medium sized eggs (205 g)


300 ml / almond milk


50 g / Reduced fat almond flour


30 g / Protein powder (whey isolate)*


5 g / Reduced fat Golden flaxseed flour


5 g / Psyllium husk powder


1/2 tsp / Gluten free baking powder


1/4 tsp / Salt


1/3 tsp / Guar gumm


12 tsp / Melted coconut oil

Instructions:


1 Preheat the oven to 190°C (fan assisted).


2 Prepare a muffin baking tray (for 12 muffins), covering each muffin tin base with 1 tsp of melted coconut oil.


3 Weigh, mix and sieve the dry ingredients.


Note:

*If you avoid dairy you can use egg white protein.


4 Place the muffin tins on a baking tray (to avoid oven soiling), put both in the oven and heat for about 5 - 10 minutes.

The muffin tray should be very hot!

5 In a medium bowl, beat the eggs for a while and then add the almond milk.


6 Add the dry ingredients and mix until smooth.


7 Place the batter in a jug so that you can easily distribute in the muffin tins without smearing.


8 Remove the hot tray with the muffin tins from the oven and distribute the pudding mixture in the slots.

You must work quickly so that the utensil does not cool.


9 Place again in the oven and bake for about 20 - 25 minutes.

Puddings should have a nice golden brown color.


10 After baking, let the puddings cool in the baking tins and transfer to a paper towel.
