This an easy recipe for keto fluffy cake with spices.


This tasty cake is perfect to accompany your coffee or tea.


It could also be a perfect "vasilopita pie" or you can just use the main ingredients and add the flavor you prefer.. cacao or lemon zest and juice or nuts so.. note this recipe!

Servings 10

• Ingredients:


70 g / Coconut flour


70 g / Almond flour


14 g / Baking powder


2 tsp / Cinnamon


1 tsp / Mahlab


1 tsp / Cardamom


1 tsp / Homemade vanilla extract


1/4 tsp / Salt


150 g / Erythritol - stevia blend 1:1


6 / Eggs (medium sized)


1 Tbsp / Apple cider vinegar


90 g / Melted Butter*


40 ml / Almond milk


20 g / Powdered erythritol - stevia blend 1:1 to decorate



• Instructions:


1 Preheat the oven at 180°C (conventional)


2 Mix the dry ingredients and spices.


3 In another bowl, beat the eggs with the apple cider vinegar for about 5 minutes.


4 Add melted butter*, almond milk and gradually the dry ingredients.


5 Place in a relatively small backing pan covered with baking paper and bake for about 40 -45 minutes.


6 When the cake is baked, let it sit

for another 5 minutes in the baking form.

Then take it out and let it cool.


7 Sprinkle some powdered sweetener.


• Serve and enjoy!


*Note:

The butter can be replaced with 80 g of coconut oil or 75 ml olive oil for a dairy free version.
