Peinirli is a kind of elongated pizza pie with a fluffy dough which can be filled with cheese, minced meat, cold cuts, vegetables etc.


This low carb version is very close to the full carb recipe and has no gluten!


This dough can be also be used for other preparations such as cheese pies (tyropitakia), ham pies, sausage pies or pizza.

Portions 6

• Ingredients:


4 / Medium sized eggs


150 gr. / Crème Fraîche


100 g / Mascarpone cheese


100 g / Almond flour


40 g / Psyllium husk


50 g / Bamboo fiber flour


2/3 tsp / Salt


15 g / Baking powder


1 Tbsp / Olive oil


Filling to your liking



• Spread mixture:


3 Tbsp / Heavy cream


1 Tbsp/ Melted butter

• Instructions:


1 Beat the eggs with Crème Fraîche and mascarpone with a hand whisk.


2 Weigh and mix all the dry ingredients.


3 Combine the two mixtures, kneading lightly and add the olive oil.


4 Let the dough rest for 15 minutes.


5 During this time, preheat the oven at 170° C (air assisted) and prepare 2 baking trays or baking sheets with parchment paper.


6 Divide the dough into 6 parts and roll each of one between 2 percment papers. Shape the peinirli (watch the video at the end of the recipe).

7 Fill the peinirli with cheese and whatever filling you prefer.


8 Bake for about 20 minutes.


9 Mix melted butter with heavy cream. After baking and while still hot, spread the peinirli with the butter mixture.

Serve and enjoy!
