The best and fluffiest French toast is made with this egg bread!


This protein bread is a kind of cloud bread made with eggs.


There are dozens of recipes on the internet for cloud bread and this is my variation.


As you will read below, it is made with only a few ingredients but there is a peculiarity in the execution since the egg whites must have stiff peaks (meringue like) and the ingredients mixing must be very slowly and gently.


That's why I decided to make a video to help you understand the process.


I'm sure this French toast will excite children and adults as well.


Of course this bread is not only eaten as French toast but it can also accompany breakfast or a main dish as well as sandwiches and toasts.

Keto Egg Bread (Cloud Bread) and French Toast


15 slices of 35-40g each

• Ingredients for the Egg Bread:


8 / Yolks (from medium sized eggs)


55 g / Whey protein powder isolate unflavoured or egg white protein powder


20 g (2 Tbsp) / Coconut flour


150 g / Cream cheese


8 / Egg whites (from medium eggs)


1 Tbsp / Apple cider vinegar


10 g (2 tsp) / Baking powder


1/4 tsp / Salt



• Egg bread instructions:


1 Preheat the oven at 150°C (fan assisted).


2 Prepare 2 bread forms (preferably silicone forms).


3 Beat the egg yolks with the cream cheese, protein powder, coconut flour and baking powder.


4 In a large bowl, beat the egg whites with apple cider vinegar and salt.


5 Add backing powder and beat until stiff peaks.


6 Combine the two mixtures with gentle movements by folding them with a silicone spatula (watch the video)

7 Pour the mixture into the forms and bake for about 45-50 minutes.

8 After baking, let the forms stay in the oven (with slightly open door) for about 5-10 minutes.

9 After that put the bread out of the baking forms and let completely cool before slicing.


Macros for 1 slice:
  1. Protein: 7 g

  2. Carbohydrates (net): 1,0 g

  3. Fat: 5.5 g

  4. Energy: 85 Kcal



Ingredients for the French Toast:


2 servings

4 slices / Of the Egg Bread


1 / Egg


100 ml / Heavy cream


1/2 tsp / Cinnamon


1 Tbsp / Butter for frying


1 Tbsp / Erythritol-Stevia blend 1:1


Cinnamon for serving

• Instructions for the French Toast:

1 Cut 4 slices of the egg bread.


2 In a small bowl, whisk the egg with the heavy cream.


3 At the same time, heat the butter in a non-stick pan.


4 Dip each slice of bread in the egg mixture, drain lightly and fry over medium heat, on both sides until golden brown, about 2-3 minutes in total.


5 Sprinkle with some sweetener and cinnamon or keto jam.


Serve and enjoy!
