Easy, low carb, keto friendly cookies with only 3 ingredients, sugar free, wheat flour free, gluten free, dairy free, even diabetic friendly!

These easy cookies are very tasty and made with only 3 ingredients.

The optional addition of salt simply balances the sweet taste. You can also add 40g of chopped

chocolate (> 85% cocoa) to enrich this recipe.

Three Ingredients

• Ingredients: 250 g / Almond butter 70 g / Natural sweetener 1:1 (I use erythritol-stevia blend) 95 g / Egg white 1/5 tsp / Salt (optional)

Instructions: 1 Preheat the oven on 160°C (fan assisted) and prepare a baking tray or baking sheet lining a parchment paper. 2 In a medium bowl, mix almond butter and sweetener with a silicone spatula (you may need to work the mixture by hand to be well combined).

Almond butter can be replaced with butter of other nuts or with tahini (sesame paste).


3 In another bowl, beat the egg whites and salt (if adding) until stiff peaks. 4 Mix the meringue into the almond butter in 2 portions, with gentle movements but not for long. 5 At the end add the chocolate (if this version is preferred). 6 Shape small balls with the dough, place on the backing tray and then press with a fork to flatten. 7 Bake the cookies for about 15 - 20 minutes. 8 After baking, let the cookies cool (as they cool they become crispy on the outside and chewy in the inside). • Serve and enjoy!
